After installing Malwarebytes on machine "A" that has, say, 10 users that log into it at different times using different accounts, how to I set the settings once (Protection, Scheduling, General Settings, Ignore List, etc...) for all 10 users?

You currently cannot do that. MBAM stores each configuration in the current user's key. So each user can configure it to operate differently.

Will MB scan the document folders for all users?

Probably not unless you opted for the full scan. It's still always best to do a quick scan on each user account anyway, that way everyone's registry gets scanned for malware as well.
