Dual boot with Shadow Defender/Deep Freeze

Hieeeeeee to all friends, 

I will be wasting your precious time for my silly problems  :D Please don't mind  :P .

PC info, 4 drives total=1TB

C: Windows 8.1 (For official works)(Almost offline works)

D: Windows 10 (Home Usage)

E: Normal Drive (Important Official Documents & Files)

F: Normal Drive (Not imp video, musics & software)

 

My Doubt: 
1) If I install Shadow Defender(SD) in my "D:Drive" to protect all 4 drives( C,D,E,F). Then I later boot into my "C:Drive" and save my work files in "E:Drive",
then I later reboot to my "D:drive"(In which SD is active). Will I lose all my work files which I had store in "E:Drive" while I was working(using win 8.1 C:drive).
 
2)Deep Freeze Or Shadow Defender? Which one is better self protected against Virus, Rootkits and Malwares?
